Salted Caramel Fudge

Ingredients: 18 squares
230g dried pitted dates
70g coconut oil
120g almond butter
2 tsp vanilla extract
boiling water(for soaking)
sea salt flakes
instructions:
1.Add the dried pitted dates to a bowl and cover with boiling water; let them soak for 10 minutes
2. Meanwhile, melt the coconut oil in the microwave
3. Strain the dates and add them to a food processor along with melted coconut oil, almond butter, and vanilla
4. Process the ingredients until smooth and creamy, scraping down the sides of the food processor bowl- if needed
5. Pour the fudge mixture into a loaf pan, lined with parchment paper and smooth it out; top it with flaked sea salt
6. Place the fudge in the freezer until frozen (4-5 hours)
7. Remove from the freezer, cut into small squares- bite sized, and enjoy!
